Getting sensor data into a microcontroller usually requires quite a bit of searching. Analog Devices - the company is an expert for all things ADC - now provides a microcontroller which is especially well-suited to data acquisition.
The ADUC816BSZ analog digital converter leaves nothing to be desired. It supports differential mode with input voltages ranging down to 20mV, and draws less than 1nA of input current. In addition to that, the part is a true analog powerhouse - it has a 12bit DAC and even a current source for driving sensors.
While the part at hand most definitely cuts down your BOM by eliminating external signal conditioning logic, do keep in mind that the most expensive part of a microcontroller system usually is its software. If your company has no experience with 8051 systems, think long before committing to the switch. If you, however, are comfortable around this evergreen, definitely give the ADUC816BSZ a chance!
